Winter prep in May: how to pickle radishes
Pickled radish is a great addition to your winter meals. In May, radishes are especially juicy and fragrant, making it the perfect time to prepare them for long-term storage.

You’ll need simple ingredients: 500 g of radish, 250 ml of water, 250 ml of vinegar, 2 tablespoons of sugar, 1 tablespoon of salt, a few garlic cloves, and some dill. Wash the radishes thoroughly, trim the ends, and slice them into rounds — this helps the marinade soak in better.

To make the marinade, combine water, vinegar, sugar, and salt in a pot and bring to a boil. Pack the radishes into sterilized jars, add garlic and dill. Pour the hot marinade over, leaving some headspace. Seal the jars and turn them upside down until they cool completely.

Store the jars in a cool place. This recipe preserves the radish’s spicy crunch, adding variety to your winter meals. Its simplicity makes it a favorite among many home cooks.
