In Italy, a major dispute has erupted over the famous national dish — pasta cacio e pepe. The British website Good Food presented this classic Roman dish as a “quick lunch” and suggested adding butter and even cream to the recipe.
In reality, this dish consists of only three ingredients: pasta, black pepper, and cheese. Italian chefs stress the importance of preserving this simple yet perfect harmony.
The Restaurant Association even brought the matter to the British Embassy in Rome. The head of the organization, Claudio Pica, stated that “this dish is a symbol of Rome” and the original recipe must remain unchanged.
Italian chefs and journalists described this as an attack on culinary tradition. Some called the Good Food recipe “an entirely different dish — pasta Alfredo” and said the name should be changed.
For Italians, food culture is an important part of national identity. Therefore, they strongly oppose changes such as adding pineapple to pizza or cream to carbonara.
The owner of Good Food has not yet commented on the situation. However, the Italian culinary community considers this matter a national “honor issue” and has reacted seriously.
