An unexpected factor that ruins new products has been revealed
The issue of washing fruits and vegetables before storing them in the refrigerator is a topic of debate among many consumers. Some believe that washing can remove bacteria and keep them healthy, while others argue that such a procedure can lead to faster spoilage of products. Maria Zolotareva, senior lecturer at the Department of Biotechnology and Industrial Pharmacy of RTU MIREA, gave a scientific explanation in this regard.

Washing and shelf life of products

According to scientific evidence, washing fruits and vegetables before placing them in the refrigerator can reduce their shelf life. The main reason for this is that the moisture remaining on the surface of the product after the washing process creates a favorable environment for the growth of bacteria and mold. Although the freezer temperature is lower than room temperature, it does not stop microbial activity. As a result, products spoil faster.

Does washing affect the natural protective layer?

The natural protective layer of fruits and vegetables can also be damaged during washing. This protective layer helps to retain moisture and prevent the entry of pathogens. If this layer is lost, products become more vulnerable to environmental influences and can dry out or rot more quickly.

Risk of cross-contamination

Washing can transfer bacteria from one product to another through water. If the products are not consumed immediately and are put back into storage, this increases the risk of their contamination.

When should you wash fruits and vegetables?

As Maria Zolotareva points out, it is recommended to wash products before preparing or consuming food. It is advisable to use clean water or special detergents certified for food purposes.

Washing fruits and vegetables before storing them in the refrigerator can lead to their deterioration faster, remove their natural protective layer and increase the risk of cross-contamination. Therefore, it is better to wash these products before direct consumption or cooking.
