
Jarkurgan district, a historically and culturally rich region of Surkhandarya region, has achieved another major achievement - now the famous national dish of this region, "Jarkurgan tandoor meat," has been registered with the state as a geographical indication. This dish will now be legally protected only as a gastronomic brand specific to the Surkhan land.
According to the data, the uniqueness of the dish is closely related to the natural climate of the region and local products. The hot and dry air of Jarkurgan, the meat of hisar lambs grazed in the pastures, and the fire lit in the tandoor from juniper branches give the dish a special taste and aroma.
"Jarkurgan tandoor meat" is typically cooked in a ground tandoor heated to +400°C for 1.5-2 hours under the influence of steam and heat. In this process, the meat reddens on the outside and retains the juice inside. As a result, the dish will not only be tasty, but also have its own dietary properties.
Registration as a geographical indication prevents the illegal use of the name of this national dish and protects the original recipe. This, in turn, will contribute to the introduction of unified product quality standards and the international recognition of the Jarkurgan brand.
Officials emphasized that "Jarqo'rg'on Tandir G'o'shti" is of great importance not only as a national dish but also as a brand that expands the region's economic and tourism opportunities. Now this dish is expected to become one hundredth of Surkhan's gastronomic heritage.
The concept of a geographical indication (GDI) is an intellectual property that guarantees the quality and reputation of a product associated with a certain territory. It identifies the true source of the product, builds consumer confidence, and creates additional economic opportunities for producers.
Thus, "Jarkurgan tandoor meat" enters history not only as the pride of Surkhan cuisine, but also as another high example of Uzbekistan's national gastronomy.
