The national dish characteristic of the capital and its surrounding areas — “Tashkent wedding pilaf” — has been officially registered as a geographical indication by the state. This was announced by the Ministry of Justice.

It is reported that this decision legally protects not only the name of the dish, but also its traditional preparation methods and unique features. From now on, the “Tashkent wedding pilaf” brand is protected by the state, and its quality is guaranteed to comply with established standards.

According to historical and ethnographic sources, pilaf-making traditions in the Tashkent oasis have been formed over centuries and passed down from generation to generation. In particular, the process of preparing wedding pilaf is distinguished by its unique rituals and craftsmanship. It is not just a simple dish, but a complex process that embodies several scientific principles — heat distribution, ingredient harmony, and cooking technologies.
